- 2 large eggs
- ⅓ cup maple syrup or honey
- 2 tsp vanilla extract
- 2 medium apples, peeled, cored, and diced
- 1 tbsp lemon juice
- 2 tbsp brown sugar
- 1 tsp ground cinnamon
- ¼ cup chopped walnuts or pecans (optional)
- ¼ cup raisins or dried cranberries (optional)
Instructions
- Preheat oven to 375°F (190°C) and grease a 9×9-inch baking dish.
- Toss diced apples with lemon juice, brown sugar, and cinnamon. Spread evenly in the baking dish.
- In a large bowl, mix oats, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, whisk together milk, eggs, maple syrup, and vanilla extract.
- Pour the dry ingredients over the apple layer in the dish.
- Slowly pour the wet mixture over the oats, ensuring all are soaked.
- Sprinkle with walnuts, pecans, or dried fruit if desired.
- Bake for 35-40 minutes until golden and set.
- Let cool for 5 minutes before serving warm.
Notes
Use Granny Smith or Honeycrisp apples for the best balance of sweetness and tartness.
