  • ½ cup unsalted butter, melted
  • 2 tbsp granulated sugar
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 medium apples, peeled, cored, and diced
  • ¼ cup granulated sugar
  • 1 tsp cinnamon
  • ½ cup all-purpose flour
  • ½ cup brown sugar
  • ½ tsp cinnamon
  • ¼ cup cold butter, cubed
  • ½ cup store-bought or homemade caramel sauce

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. Mix graham cracker crumbs, melted butter, and sugar until combined; press into the pan and bake for 8–10 minutes, then let cool.
  3. Beat cream cheese and sugar until smooth, add eggs one at a time, mix well, and stir in vanilla extract. Spread over the crust.
  4. Toss diced apples with sugar and cinnamon, then spread over the cheesecake layer.
  5. Combine flour, brown sugar, and cinnamon; cut in butter until mixture forms coarse crumbs, then sprinkle over the apples.
  6. Bake for 35–40 minutes until the cheesecake is set and streusel is golden. Let cool completely, then refrigerate for at least 2 hours.
  7. Before serving, drizzle caramel sauce over the bars, slice, and enjoy!

Notes

Use tart apples like Granny Smith for the best flavor. Chill bars before slicing for cleaner cuts.
