Description

  • 3/4 cup unsalted butter, room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg, room temperature
  • 1 egg yolk, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup finely grated carrots (patted dry)
  • 1/2 cup (4 oz) block-style cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups confectioners’ sugar, sifted
  • Chopped walnuts or pecans for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together flour, baking soda, salt, cinnamon, ginger, and nutmeg.
  3. Beat butter, granulated sugar, and brown sugar until light and fluffy.
  4. Mix in egg, egg yolk, and vanilla extract.
  5. Gradually add dry ingredients, then fold in grated carrots.
  6. Scoop dough onto baking sheet, spacing 2 inches apart.
  7. Bake for 12-15 minutes, then let cool completely.
  8. Beat cream cheese and butter until smooth.
  9. Add vanilla and sifted confectioners’ sugar, mixing until fully incorporated.
  10. Spread frosting over cooled cookies and garnish with chopped nuts if desired.

Notes

For best results, shred your own carrots as store-bought ones are too dry. Let cookies cool before frosting to prevent melting.
