- 1 cup unsalted butter, softened
- 1 ½ cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- For the Filling:
- 1 can (or about 2 cups) cherry pie filling
- For the Optional Glaze:
- 1 cup powdered sugar
- 2 tablespoons milk
- ½ teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Cream together butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
- In a separate bowl, whisk together flour and baking powder, then gradually add to wet ingredients.
- Press about ⅔ of the dough into the baking dish to form an even layer.
- Spread cherry pie filling over the crust, leaving a small border around the edges.
- Drop spoonfuls of the remaining dough over the filling.
- Bake for 35-40 minutes or until the top is golden brown.
- Let bars cool completely before cutting.
- For the glaze, whisk together powdered sugar, milk, and vanilla until smooth, then drizzle over cooled bars.
Notes
Use fresh or frozen cherries if making homemade filling. Do not overbake to keep the bars moist. Store at room temperature for up to 3 days, refrigerate for 5 days, or freeze for up to 3 months.
