- 4 boneless, skinless chicken breasts (or thighs)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 2 tablespoons olive oil
- 1 tablespoon unsalted butter
- 12 ounces egg noodles
- 4 tablespoons unsalted butter
- 1 teaspoon garlic powder
- ¼ cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Bring a large pot of salted water to a boil. Add the egg noodles and cook according to the package instructions until tender. Reserve ½ cup of pasta water, then drain and set aside.
- Pat the chicken dry and season with salt, pepper, garlic powder, and smoked paprika.
- Heat olive oil in a large skillet over medium-high heat. Cook the chicken for 4–6 minutes per side until golden brown and fully cooked (internal temp should reach 165°F). Transfer to a plate and cover to keep warm.
- In the same skillet, melt butter over low heat. Stir in garlic powder and cook for 30 seconds.
- Add the cooked noodles, tossing them in the butter mixture. Gradually add reserved pasta water for a silky sauce. Mix in Parmesan cheese and season with salt and pepper.
- Slice the chicken and serve over the buttered noodles. Garnish with fresh parsley and extra Parmesan if desired.
Notes
For extra flavor, add a splash of lemon juice or red pepper flakes to the noodles. You can also toss in sautéed spinach, mushrooms, or peas for added texture and nutrients.
