Ingredients

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 12 ounces egg noodles
  • 4 tablespoons unsalted butter
  • 1 teaspoon garlic powder
  • ¼ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Add the egg noodles and cook according to the package instructions until tender. Reserve ½ cup of pasta water, then drain and set aside.
  2. Pat the chicken dry and season with salt, pepper, garlic powder, and smoked paprika.
  3. Heat olive oil in a large skillet over medium-high heat. Cook the chicken for 4–6 minutes per side until golden brown and fully cooked (internal temp should reach 165°F). Transfer to a plate and cover to keep warm.
  4. In the same skillet, melt butter over low heat. Stir in garlic powder and cook for 30 seconds.
  5. Add the cooked noodles, tossing them in the butter mixture. Gradually add reserved pasta water for a silky sauce. Mix in Parmesan cheese and season with salt and pepper.
  6. Slice the chicken and serve over the buttered noodles. Garnish with fresh parsley and extra Parmesan if desired.

Notes

For extra flavor, add a splash of lemon juice or red pepper flakes to the noodles. You can also toss in sautéed spinach, mushrooms, or peas for added texture and nutrients.
