Description

These Chocolate Banana Oat Muffins are naturally sweetened, packed with fiber-rich oats, and have just the right amount of chocolate for a touch of indulgence.


Ingredients

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • ½ cup whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 3 large ripe bananas, mashed
  • 2 eggs (or flax eggs for vegan option)
  • ½ cup honey or maple syrup
  • ⅓ cup melted coconut oil or butter
  • 1 teaspoon vanilla extract
  • ¾ cup dark chocolate chips
  • ¼ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners or grease lightly.
  2. In a large bowl, whisk together oats, flours, baking powder, baking soda, and salt.
  3. In a separate bowl, mash bananas until smooth.
  4. Add eggs, honey or maple syrup, melted coconut oil, and vanilla extract, mixing until well combined.
  5. Gradually add the dry ingredients into the wet mixture, stirring until just combined.
  6. Fold in the chocolate chips and nuts (if using).
  7. Divide the batter evenly among muffin cups, filling ¾ full.
  8. Sprinkle extra chocolate chips on top if desired.
  9. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  10. Let muffins cool in the tin for 5 minutes, then transfer to a wire rack.
  11. Serve warm or at room temperature.

Notes

Use overripe bananas for the best natural sweetness. Don’t overmix the batter to ensure fluffy muffins.
