These Chocolate Banana Oat Muffins are naturally sweetened, packed with fiber-rich oats, and have just the right amount of chocolate for a touch of indulgence.

- 1 cup rolled oats
- 1 cup all-purpose flour
- ½ cup whole wheat flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 3 large ripe bananas, mashed
- 2 eggs (or flax eggs for vegan option)
- ½ cup honey or maple syrup
- ⅓ cup melted coconut oil or butter
- 1 teaspoon vanilla extract
- ¾ cup dark chocolate chips
- ¼ cup chopped walnuts or pecans (optional)
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with paper liners or grease lightly.
- In a large bowl, whisk together oats, flours, baking powder, baking soda, and salt.
- In a separate bowl, mash bananas until smooth.
- Add eggs, honey or maple syrup, melted coconut oil, and vanilla extract, mixing until well combined.
- Gradually add the dry ingredients into the wet mixture, stirring until just combined.
- Fold in the chocolate chips and nuts (if using).
- Divide the batter evenly among muffin cups, filling ¾ full.
- Sprinkle extra chocolate chips on top if desired.
- Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
- Let muffins cool in the tin for 5 minutes, then transfer to a wire rack.
- Serve warm or at room temperature.
Notes
Use overripe bananas for the best natural sweetness. Don’t overmix the batter to ensure fluffy muffins.
