- 8 oz cream cheese, softened
- 1/4 cup granulated sugar

- 1/2 cup granulated sugar
- 1 tablespoon ground cinnamon
Instructions
- Cream the butter and sugar until light and fluffy.
- Mix in eggs one at a time, followed by vanilla extract.
- In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
- Gradually mix dry ingredients into wet ingredients until combined.
- Cover dough and refrigerate for at least 30 minutes.
- In a medium bowl, beat cream cheese until smooth.
- Mix in sugar and vanilla extract.
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Take 1 tablespoon of dough, flatten it, add 1 teaspoon of cheesecake filling, and cover with another tablespoon of dough.
- Seal edges and arrange cookies 2 inches apart on the baking sheet.
- Bake for 12–15 minutes or until edges turn golden.
- Mix sugar and cinnamon in a small bowl.
- Roll warm cookies in the cinnamon-sugar mixture.
