- 1 ½ cups (150g) oat flakes
- ⅔ cup (150g) milk (almond, dairy, oat, or any plant-based alternative)
- 2 ripe bananas, mashed
- 2 eggs
- 1 teaspoon (5g) baking powder
- ¼ cup (30g) unsweetened cocoa powder
- 1 tablespoon honey, maple syrup, or stevia (optional, for extra sweetness)
- ¼ cup (30g) chopped walnuts
- 1 oz (30g) dark chocolate, melted or chopped (for topping)
- 1 teaspoon vanilla extract
- 1 tablespoon chia seeds
Instructions
- Preheat the oven to 350°F (180°C) and grease a baking pan.
- Mix oat flakes with milk and let sit for 10 minutes.
- In a large bowl, mash the bananas until smooth.
- Add eggs, baking powder, cocoa powder, vanilla extract, and sweetener (if using). Stir well.
- Fold in the softened oats and milk mixture.
- Add chopped walnuts and chia seeds.
- Pour the batter into the greased baking pan.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Drizzle with melted dark chocolate or sprinkle chopped chocolate on top while still warm.
- Let cool slightly before slicing and serving.
Notes
Enjoy warm for a gooey texture or pair with Greek yogurt or nut butter. Store in an airtight container for up to 5 days or freeze for up to 3 months.
