  • 1 1/3 cups rolled oats
  • 3/4 cup all-purpose flour (or whole wheat)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2/3 cup light brown sugar
  • 1 cup mashed ripe bananas (about 2 medium)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup honey
  • Optional Topping:
  • 3/4 cup rolled oats
  • 1/3 cup light brown sugar
  • 2 tablespoons melted butter
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8-inch baking dish or line with parchment paper.
  2. In a medium bowl, mix oats, flour, baking soda, and salt.
  3. In a large bowl, cream butter and brown sugar until fluffy. Add eggs one at a time, mixing well.
  4. Stir in mashed bananas, honey, and vanilla extract.
  5. Gradually add dry ingredients, mixing until just combined.
  6. Pour batter into the baking dish. If using topping, mix oats, brown sugar, melted butter, and cinnamon, then sprinkle over cake.
  7. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.

Notes

Use overripe bananas for extra sweetness. Swap butter for coconut oil for a dairy-free version. Store leftovers in an airtight container at room temperature for up to 3 days.
