- 3/4 cup all-purpose flour (or whole wheat)
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 2/3 cup light brown sugar
- 1 cup mashed ripe bananas (about 2 medium)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup honey
- Optional Topping:
- 3/4 cup rolled oats
- 1/3 cup light brown sugar
- 2 tablespoons melted butter
- 1/2 teaspoon cinnamon
Instructions
- Preheat oven to 350°F (175°C). Grease an 8-inch baking dish or line with parchment paper.
- In a medium bowl, mix oats, flour, baking soda, and salt.
- In a large bowl, cream butter and brown sugar until fluffy. Add eggs one at a time, mixing well.
- Stir in mashed bananas, honey, and vanilla extract.
- Gradually add dry ingredients, mixing until just combined.
- Pour batter into the baking dish. If using topping, mix oats, brown sugar, melted butter, and cinnamon, then sprinkle over cake.
- Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
Notes
Use overripe bananas for extra sweetness. Swap butter for coconut oil for a dairy-free version. Store leftovers in an airtight container at room temperature for up to 3 days.
