- 1 pound ground beef (80/20 blend recommended for juiciness)
- 4 slices of bacon
- 1 large onion, sliced
- 1/2 cup Irish stout (such as Guinness)
- 1/2 cup cheddar cheese, grated
- 1/2 cup sour cream
- 2 tablespoons Dijon mustard
- 1 tablespoon Worcestershire sauce
- Salt and pepper to taste
- 4 burger buns (preferably brioche)
- Butter (for toasting buns)
Instructions
- Cook the bacon in a skillet over medium heat until crispy. Remove and place on paper towels to drain.
- In the same skillet, add sliced onions and cook over medium heat until caramelized, about 10-15 minutes. Add stout and simmer until reduced by half. Season with salt and pepper. Set aside.
- In a bowl, mix ground beef with Worcestershire sauce, salt, and pepper. Form into 4 patties, slightly larger than the buns.
- Cook patties on a grill or skillet over medium-high heat for 3-4 minutes per side. During the last minute of cooking, top with cheddar cheese to melt.
- In a small bowl, mix sour cream, Dijon mustard, and a pinch of salt. Set aside.
- Melt butter in a pan and toast the buns until golden brown.
- Assemble burgers with patties, caramelized onions, bacon, mustard sauce, and top buns. Serve hot.
Notes
For a traditional Irish twist, try using ground lamb instead of beef. Customize the cheese or add extra toppings like jalapeños for a spicy kick.
