Description

Ingredients

  • 2 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • 1 cup cold unsalted butter, diced
  • ½ teaspoon salt
  • 4 large eggs
  • 1 ½ cups granulated sugar
  • ⅓ cup all-purpose flour
  • ½ cup fresh lemon juice
  • Zest of 2 lemons

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×13-inch baking dish with parchment paper.
  2. In a large bowl, mix flour, sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs.
  3. Reserve 1 ½ cups of the mixture for topping; press remaining mixture into the bottom of the prepared baking dish.
  4. Bake for 15–20 minutes, until lightly golden. Let cool slightly.
  5. In a medium bowl, whisk eggs, sugar, flour, lemon juice, and zest until smooth.
  6. Pour filling over partially baked crust and spread evenly.
  7. Sprinkle reserved crumb mixture evenly over the filling.
  8. Bake for 20–25 minutes, until topping is golden brown and filling is set.
  9. Let cool completely, then refrigerate for at least 2 hours before slicing.
  10. Dust with powdered sugar before serving.

Use fresh lemons for the best flavor. Keeping the butter cold ensures a crisp crust. Let the bars chill before cutting for cleaner slices and enhanced flavor.
