- 2 ½ cups all-purpose flour
- ¾ cup granulated sugar
- 1 cup cold unsalted butter, diced
- ½ teaspoon salt
- 4 large eggs
- 1 ½ cups granulated sugar
- ⅓ cup all-purpose flour
- ½ cup fresh lemon juice
- Zest of 2 lemons
Instructions
- Preheat oven to 350°F (175°C) and line a 9×13-inch baking dish with parchment paper.
- In a large bowl, mix flour, sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs.
- Reserve 1 ½ cups of the mixture for topping; press remaining mixture into the bottom of the prepared baking dish.
- Bake for 15–20 minutes, until lightly golden. Let cool slightly.
- In a medium bowl, whisk eggs, sugar, flour, lemon juice, and zest until smooth.
- Pour filling over partially baked crust and spread evenly.
- Sprinkle reserved crumb mixture evenly over the filling.
- Bake for 20–25 minutes, until topping is golden brown and filling is set.
- Let cool completely, then refrigerate for at least 2 hours before slicing.
- Dust with powdered sugar before serving.
Notes
Use fresh lemons for the best flavor. Keeping the butter cold ensures a crisp crust. Let the bars chill before cutting for cleaner slices and enhanced flavor.
