A fresh and flavorful Mediterranean chicken salad topped with a creamy homemade tzatziki sauce.

- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp garlic powder
- ½ tsp smoked paprika
- Salt and black pepper, to taste
- 4 cups mixed greens (romaine, spinach, or arugula)
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- ½ red onion, thinly sliced
- ½ cup Kalamata olives, pitted
- ¼ cup crumbled feta cheese
- 1 cup Greek yogurt
- ½ cucumber, grated and drained
- 2 cloves garlic, minced
- 1 tbsp fresh dill, chopped
- 1 tbsp lemon juice
- Salt and pepper, to taste
Instructions
- Preheat your grill or skillet over medium-high heat.
- Rub the chicken breasts with olive oil and season with oregano, garlic powder, smoked paprika, salt, and pepper.
- Cook for 5–6 minutes per side, or until fully cooked.
- Let the chicken rest for 5 minutes before slicing.
- In a bowl, combine Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, salt, and pepper.
- Mix well and refrigerate for at least 15 minutes.
- Arrange mixed greens on a large serving platter.
- Add cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese.
- Top with sliced grilled chicken.
- Drizzle the creamy tzatziki sauce over the salad or serve it on the side.
- Garnish with additional dill or a squeeze of lemon juice for extra brightness.
Notes
For best results, use fresh ingredients and marinate the chicken for extra flavor.
