Description

  • ½ cup unsalted butter (softened)
  • ½ cup honey or maple syrup
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup grated carrots (about 2 medium carrots)
  • ½ cup chopped walnuts or pecans
  • ¼ cup sunflower seeds or pumpkin seeds
  • 2 tbsp chia seeds or flaxseeds

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine oats, whole wheat flour, baking soda, cinnamon, and salt. Mix well.
  3. In a separate bowl, cream together the butter and honey until smooth. Beat in the egg and vanilla extract until fully incorporated.
  4. Gradually add the dry ingredients to the wet mixture, stirring until combined. Fold in the grated carrots, nuts, and seeds until evenly distributed.
  5. Scoop tablespoons of dough onto the baking sheet, flattening slightly with the back of a spoon.
  6. Bake for 10–12 minutes or until the edges are golden brown.
  7. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack. Serve warm or store for later snacking.

Notes

Grate carrots finely to ensure they blend seamlessly into the cookie dough. Don’t overbake to maintain a soft and chewy texture. Customize your mix-ins by adding dried cranberries, raisins, or shredded coconut.
