- 1 tsp vanilla extract
- 1 cup grated carrots (about 2 medium carrots)
- ½ cup chopped walnuts or pecans
- ¼ cup sunflower seeds or pumpkin seeds
- 2 tbsp chia seeds or flaxseeds
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine oats, whole wheat flour, baking soda, cinnamon, and salt. Mix well.
- In a separate bowl, cream together the butter and honey until smooth. Beat in the egg and vanilla extract until fully incorporated.
- Gradually add the dry ingredients to the wet mixture, stirring until combined. Fold in the grated carrots, nuts, and seeds until evenly distributed.
- Scoop tablespoons of dough onto the baking sheet, flattening slightly with the back of a spoon.
- Bake for 10–12 minutes or until the edges are golden brown.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack. Serve warm or store for later snacking.
Notes
Grate carrots finely to ensure they blend seamlessly into the cookie dough. Don’t overbake to maintain a soft and chewy texture. Customize your mix-ins by adding dried cranberries, raisins, or shredded coconut.
