Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, beat eggs, then add oil, vanilla extract, and crushed pineapple. Stir until combined.
  4. Gradually mix wet ingredients into dry ingredients, stirring until just combined.
  5. Fold in optional add-ins like nuts, coconut, or spices if using.
  6. Pour batter into loaf pan and bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let cool in pan for 10 minutes before transferring to a wire rack.
