Instructions
- Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, beat eggs, then add oil, vanilla extract, and crushed pineapple. Stir until combined.
- Gradually mix wet ingredients into dry ingredients, stirring until just combined.
- Fold in optional add-ins like nuts, coconut, or spices if using.
- Pour batter into loaf pan and bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in pan for 10 minutes before transferring to a wire rack.
Notes
Use fresh or high-quality canned pineapple for the best flavor. Avoid overmixing the batter to keep the bread light and tender. Store in an airtight container for up to 3 days at room temperature or freeze for up to 3 months.
