Instructions
- Preheat oven to 350°F (175°C) and grease a 9-inch springform pan.
- Sift flour, sugar, cocoa powder, baking soda, and salt in a bowl.
- Whisk egg, buttermilk, oil, vanilla, and food coloring in another bowl.
- Combine wet and dry ingredients, mix until just combined.
- Pour batter into pan and bake for 25–30 minutes.
- Lower oven to 325°F (160°C).
- Beat cream cheese and sugar until smooth.
- Add eggs one at a time, mix, then stir in vanilla and sour cream.
- Pour cheesecake mixture over cooled red velvet cake.
- Bake for 40–45 minutes until set.
- In a saucepan, heat strawberry jam and lemon juice until smooth.
- Arrange strawberries on cooled cheesecake.
- Drizzle warm jam mixture over strawberries.
- Remove cheesecake from pan, garnish with whipped cream and mint.
