Ingredients

- 3 cups all-purpose flour
- 3 cloves garlic, minced
- 1 tablespoon fresh rosemary, finely chopped
- 1 ¼ teaspoons kosher salt
- ¾ teaspoon ground black pepper
- ½ teaspoon instant yeast
- 1 ½ cups room-temperature water
- 2 tablespoons cornmeal (optional, for the skillet)
Instructions
- In a large bowl, combine flour, garlic, rosemary, salt, pepper, and yeast.
- Slowly pour in water and mix until a sticky dough forms.
- Cover and let rise at room temperature for 18-24 hours.
- Grease a 10-inch cast iron skillet and sprinkle with cornmeal.
- Transfer dough to a floured surface and shape into a round loaf.
- Place in the skillet, cover with a towel, and let rise for 2 hours.
- Preheat oven to 450°F (232°C).
- Bake for 30-40 minutes until golden brown and crusty.
- Let cool in the skillet for 15 minutes before slicing and serving.
Notes
For an extra-crispy crust, place a pan of ice cubes in the oven to create steam.
