Description

A hearty and comforting soup that brings the classic flavors of shepherd’s pie into a rich, creamy dish. Perfect for chilly evenings and family gatherings.


Ingredients

  • 1 lb ground beef or lamb
  • 1 tbsp olive oil
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 2 carrots (diced)
  • 2 celery stalks (diced)
  • 2 cups beef broth
  • 1 cup water
  • 1 cup frozen peas
  • 1 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 large potatoes (peeled and boiled)
  • ¼ cup milk
  • 2 tbsp butter
  • ½ cup shredded cheddar cheese (optional)
  • Salt to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground meat and cook until browned, breaking it into smaller pieces. Drain excess fat.
  3. Stir in onion, garlic, carrots, and celery. Sauté for 5 minutes until vegetables soften.
  4. Stir in tomato paste and Worcestershire sauce. Cook for 1–2 minutes.
  5. Add beef broth, water, thyme, salt, and pepper. Bring to a simmer.
  6. Reduce heat and let the soup simmer for 20 minutes, stirring occasionally.
  7. While the soup simmers, mash boiled potatoes with butter and milk until smooth.
  8. Season with salt and stir in cheddar cheese if desired.
  9. Ladle the soup into bowls.
  10. Spoon mashed potatoes on top of each serving or pipe them using a piping bag for a decorative touch.
  11. Garnish with parsley or additional cheddar cheese, if desired.

Notes

Use leftover mashed potatoes for convenience. Adjust soup consistency by adding more broth. Sautéing the tomato paste enhances the depth of flavor.
