Description

A delicious and easy Stuffed Bell Pepper Casserole with all the flavors of classic stuffed peppers in a convenient one-pot meal.


Ingredients

  • 1 lb ground beef (or ground turkey)
  • 1 medium onion, diced
  • 3 large bell peppers, chopped (red, yellow, or green)
  • 2 cups cooked white or brown rice
  • 1 can (15 oz) diced tomatoes, undrained
  • 1 can (15 oz) tomato sauce
  • 1 cup shredded mozzarella or cheddar cheese
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • Salt and black pepper, to taste
  • Optional: 1 cup black beans or kidney beans, 1 cup corn, red pepper flakes

Instructions

  1. Dice the onion and chop the bell peppers.
  2. Cook the rice according to package instructions.
  3. Heat olive oil in a large oven-safe skillet over medium heat.
  4. Cook ground beef (or turkey) until browned, breaking it into crumbles.
  5. Add diced onion and bell peppers; cook until softened (about 5 minutes).
  6. Stir in diced tomatoes, tomato sauce, garlic powder, paprika, oregano, salt, and pepper.
  7. Let simmer for 5 minutes.
  8. Mix in cooked rice until evenly combined.
  9. Sprinkle shredded cheese on top.
  10. Bake in a preheated oven at 375°F for 20 minutes.

Notes

Use a mix of bell pepper colors for visual appeal. Pre-cooked rice saves time. Try different cheeses like pepper jack for extra flavor.
