A delicious and easy Stuffed Bell Pepper Casserole with all the flavors of classic stuffed peppers in a convenient one-pot meal.

- 1 lb ground beef (or ground turkey)
- 1 medium onion, diced
- 3 large bell peppers, chopped (red, yellow, or green)
- 2 cups cooked white or brown rice
- 1 can (15 oz) diced tomatoes, undrained
- 1 can (15 oz) tomato sauce
- 1 cup shredded mozzarella or cheddar cheese
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp dried oregano
- Salt and black pepper, to taste
- Optional: 1 cup black beans or kidney beans, 1 cup corn, red pepper flakes
Instructions
- Dice the onion and chop the bell peppers.
- Cook the rice according to package instructions.
- Heat olive oil in a large oven-safe skillet over medium heat.
- Cook ground beef (or turkey) until browned, breaking it into crumbles.
- Add diced onion and bell peppers; cook until softened (about 5 minutes).
- Stir in diced tomatoes, tomato sauce, garlic powder, paprika, oregano, salt, and pepper.
- Let simmer for 5 minutes.
- Mix in cooked rice until evenly combined.
- Sprinkle shredded cheese on top.
- Bake in a preheated oven at 375°F for 20 minutes.
Notes
Use a mix of bell pepper colors for visual appeal. Pre-cooked rice saves time. Try different cheeses like pepper jack for extra flavor.
